I'm getting crockpot crazyyyyyyyyyyy!!

I found this recipe on (DUH) Pinterest and tweaked it a little bit...omg it turned out so good. 

Ingredients:

  • 4 raw, boneless, skinless chicken breasts (about 8 oz. each)
  • 2 (15 ounce) cans black beans (rinsed and drained) 
  • 1 (28 ounce) can diced tomatoes in juice, low sodium is best
  • 1 (12 ounce) jar of your favorite salsa, no sugar added
  • 1/2 white onion
  • Cayenne pepper and red pepper flakes to taste
  • Salt and pepper to taste

Directions:

  1. Place the chicken breasts on the bottom of your slow cooker. Pour the tomatoes and salsa over that and then layer on the beans and corn.
  2. Cook on HIGH for 4 hours, or until the chicken easily falls apart when the pot is stirred.
Throw some cheddar cheese on top, fat free sour cream (or non-fat plain Greek yogurt!), cilantro and lime.
You can serve it over brown rice or in a low carb tortilla or just right out of the bowl, YUM!
